Tried beef ribs the first time. Next time i have to reduce heat from 100°C (212°F) to 80°C (176°F) and have to leave them longer in the oven. This time they where cooking for about 10h, next time i give them 14h @ 80°C. 

Receipe following under the pics.

3 kg (approx. 6.6lbs) Beef ribs

For the rub:
5 tablespoons salt
1 tbsp. sugar (prefered: brown sugar)
1 tbsp. fresh ground pepper
1 tsp. garlic powder
1 tsp. smoked salt

That´s it. Rub the ribs gently with the spice mix. Wrap tightly in tinfoil an place on a backing grate. As it may loose some moisture, make sure to place a backing tray under it or you may gonna mess up your oven.

turn on the oven to 100° (10h, not that medium anymore) or 80° (14h, way more medium) an let the heat do the rest. Measure the temperature before serving. You need at least 70°C (160°F) to make sure you have a safe product.
